Identify whichever one is your hard drive. This will list all the mounted disk volumes.Once you've installed it, rebooted, gone through the steps to create a new user account and all that stuff, your BACKUP folder is there and you can sort through it and move things into the relevant folders again. When you choose your hard drive destination, it won't see it as having a prior macOS installed, it will install a pristine new version with none of your past documents and settings. Then I would quit Terminal and start the installer. Back in the day, when I did this type of "clean install" (from booting off a USB installer or a DVD) I would open Terminal first and make a new folder on the hard drive (let's call it "BACKUP") and then I would move EVERYTHING on the hard drive INTO this new folder.
